Cheesy Rigatoni in the Instant Pot

Servings: 4-6 people

Ingredients:

  • 1 pound rigatoni pasta
  • 2 cups marinara sauce (homemade or store-bought)
  • 1 cup grated mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon premium olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon dried basil
  • Salt and pepper, to taste
  • 1 cup whole milk

Instructions:

  1. Press the "Saute" button on the Instant Pot and heat the olive oil. Add the chopped onion and cook until translucent, about 3-4 minutes.
  2. Add the minced garlic and cook for an additional 1 minute, until fragrant.
  3. Add the marinara sauce, salt, and pepper. Stir to combine. Bring the sauce to a simmer and let it cook for 2-3 minutes.
  4. Add the rigatoni pasta to the Instant Pot and stir to combine with the sauce. Add 1 cup of water and make sure the pasta is fully covered.
  5. Close the lid of the Instant Pot and set the valve to "Sealing". Press the "Manual" or "Pressure Cook" button and set the cooking time to 5 minutes at high pressure.
  6. When the cooking time is up, allow the pressure to release naturally for 5 minutes, then quick-release any remaining pressure.
  7. Open the lid and stir in the grated mozzarella and Parmesan cheese until melted and smooth.
  8. Add the whole milk and stir until well combined.
  9. Close the lid and let it sit for 2-3 minutes to let the cheese sauce thicken.
  10. Serve hot, garnished with additional basil if desired.
