Homemade Worcestershire Sauce Recipe

Yield: 12 ounces (340ml)

Ingredients:

  • 1 cup (240ml) apple cider vinegar
  • 1/2 cup (120ml) water
  • 1/4 cup (60g) molasses
  • 1/4 cup (30g) brown sugar
  • 2 tablespoons (30g) salt
  • 1 tablespoon (15g) granulated white sugar
  • 2 tablespoons (30ml) chopped fresh ginger
  • 1 teaspoon (5g) whole black peppercorns
  • 1/2 teaspoon (2g) ground cloves
  • 1/2 teaspoon (2g) ground cinnamon
  • 1/4 teaspoon (1g) ground cayenne pepper (optional)

Food Safety Concerns:

  • Always wash your hands thoroughly before preparing the sauce.
  • Use clean equipment and utensils to handle the ingredients and cook the sauce.
  • Sterilize the jar and lid by submerging them in boiling water for 5 minutes before filling and sealing.
  • Store the sauce in the refrigerator at 40°F (4°C) or below and use within 6 months.

Instructions:

  1. In a medium saucepan, combine the apple cider vinegar, water, molasses, brown sugar, salt, granulated white sugar, ginger, black peppercorns, cloves, and cinnamon.
  2. Bring the mixture to a boil over medium heat, stirring occasionally, then reduce the heat to low and simmer for 5 minutes.
  3. Remove the saucepan from the heat and let it cool to room temperature.
  4. Strain the sauce through a fine-mesh sieve or cheesecloth to remove the solids.
  5. Transfer the sauce to a clean glass jar and seal with a sterilized lid.
  6. Store the sauce in the refrigerator and allow it to mature for at least 2 weeks before using.

Notes:

  • The sauce will thicken slightly as it matures. If it becomes too thick, you can thin it with a small amount of water.
  • The sauce may develop an effervescence or "head" over time due to the natural carbonation of the apple cider vinegar. This is normal and does not affect the flavor or safety of the sauce.
  • Once opened, the sauce should be used within 1 month and stored in the refrigerator.

Tips and Variations:

  • For a less spicy sauce, reduce or omit the cayenne pepper.
  • To make a lighter-colored sauce, reduce the amount of molasses or omit it altogether.
  • Experiment with different spices, such as ground coriander or ground allspice, to create unique flavor profiles.
