Jollof Rice with Beef Recipe

Servings: 4-6 people

Food Safety Considerations:

  • Wash your hands thoroughly with soap and warm water for at least 20 seconds before handling the ingredients.
  • Use separate cutting boards and utensils for raw meat and vegetables to prevent cross-contamination.
  • Cook the rice and meat to the recommended internal temperatures to ensure food safety.
  • Refrigerate leftovers promptly and consume within 3-4 days.

Ingredients:

  • 2 cups uncooked long-grain rice
  • 2 pounds beef cubes (e.g., chuck or round)
  • 2 medium onions, chopped
  • 2 cloves garlic, minced
  • 1 medium red bell pepper, chopped
  • 1 can (28 oz) crushed tomatoes
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and black pepper, to taste
  • 2 tablespoons vegetable oil
  • 2 cups beef broth
  • 1 tablespoon tomato paste
  • Fresh parsley, chopped (optional)

Instructions:

  1. Prepare the Beef:
    • In a large bowl, combine beef cubes, onions, garlic, red bell pepper, cumin, paprika, salt, and black pepper. Mix well until the beef is evenly coated with the spice mixture.
  2. Cook the Beef:
    • Heat 1 tablespoon of vegetable oil in a large Dutch oven or heavy pot over medium-high heat. Add the beef mixture and cook until browned on all sides, about 5-7 minutes.
    • Remove the beef from the pot using a slotted spoon and set aside. Leave the remaining juices in the pot.
  3. Cook the Rice:
    • Rinse the rice in a fine-mesh strainer under cold running water until the water runs clear. Drain well and set aside.
    • Heat the remaining 1 tablespoon of vegetable oil in the same pot over medium heat. Add the cooked rice and stir to coat the rice with the oil.
    • Cook the rice for 2-3 minutes, stirring constantly, until it is lightly toasted.
  4. Assemble the Jollof Rice:
    • In a separate saucepan, combine beef broth, crushed tomatoes, tomato paste, and 1 cup of the cooked beef. Bring the mixture to a boil, then reduce the heat to low and simmer for 10-15 minutes, stirring occasionally.
    • Add the cooked rice to the saucepan and stir to combine with the beef and tomato mixture. Cook for an additional 5 minutes, stirring frequently, until the rice is coated with the flavorful mixture.
  5. Combine the Beef and Rice:
    • Add the cooked beef back into the saucepan and stir to combine with the rice. Season with salt and black pepper to taste.
  6. Serve:
    • Serve the Jollof Rice with Beef hot, garnished with chopped fresh parsley if desired.

Internal Temperatures:

  • Cooked beef: 145°F (63°C) with a 3-minute rest time
  • Cooked rice: not applicable, as rice is cooked through during the cooking process
