Killer Virgin Cocojito Ice Cream Recipe

Yield: About 1 1/2 quarts

Ingredients:

  • 2 cups heavy cream
  • 1 cup whole milk
  • 1/2 cup granulated sugar
  • 1/4 cup unsweetened shredded coconut
  • 1/4 cup fresh lime juice
  • 1/4 cup simple syrup (see note)
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon vanilla extract
  • Ice cream base churned in an ice cream maker

Note: Simple syrup is a mixture of equal parts water and granulated sugar, dissolved and then cooled. To make simple syrup, combine 1 cup water and 1 cup granulated sugar in a saucepan. Heat over medium heat, stirring until the sugar is dissolved. Let cool before using.
