Real Indian Mango Chutney Recipe

** Servings:** About 2 cups (475 ml)

Ingredients:

  • 3 ripe Indian mangoes (such as Alphonso, Haden, or Kesar), diced
  • 1 cup (200 g) granulated sugar
  • 1/2 cup (100 ml) freshly squeezed lime juice
  • 1/4 cup (60 ml) water
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground cardamom
  • Salt, to taste
  • Patak's or other authentic Indian chutney spice blend (optional), 1/2 teaspoon

Instructions:

  1. Wash your hands thoroughly before starting to prepare the chutney.
  2. In a large, heavy-bottomed saucepan, combine the diced mango, sugar, lime juice, water, onion, garlic, ginger, cinnamon, cardamom, and salt.
  3. Bring the mixture to a boil over medium heat, stirring occasionally, until the sugar has dissolved.
  4. Reduce the heat to low and simmer, covered, for 20 to 25 minutes or until the mango is tender and the chutney has thickened. Stir occasionally to prevent scorching.
  5. Remove the saucepan from the heat and let it cool slightly.
  6. Use an immersion blender or a regular blender to purée the chutney to your desired consistency.
  7. Taste and adjust the seasoning as needed.

Food Safety Notes:

  • Always wash your hands before handling food.
  • Use a clean and sanitized work surface and utensils.
  • Cook the chutney to an internal temperature of at least 145°F (63°C) to ensure food safety.
  • Cool the chutney quickly and refrigerate or freeze it promptly to prevent bacterial growth.

Storage and Shelf Life:

  • Store the chutney in an airtight container in the refrigerator for up to 6 months or in the freezer for up to 1 year.
  • Before serving, bring the chutney to room temperature or refrigerate it overnight to allow the flavors to meld together.

Tips and Variations:

  • For a more authentic flavor, use a combination of Patak's or other authentic Indian chutney spice blend with the listed spices.
  • Adjust the amount of sugar to your taste, keeping in mind that the mango will sweeten the chutney during cooking.
  • Experiment with other spices or herbs, such as cayenne pepper, cilantro, or tamarind, to create a unique flavor profile.
