Steamed Fresh Green Beans

Ingredients:

  • 1 pound fresh green beans, trimmed
  • 2 tablespoons water
  • 1 tablespoon salt
  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced
  • 1 tablespoon unsalted butter

Instructions:

  1. Rinse the green beans under cold running water, and pat them dry with a clean towel.
  2. Fill a large pot with 2 inches of water, and bring it to a boil.
  3. Reduce the heat to medium-low, and fit the pot with a steamer basket.
  4. Add the green beans, salt, and lemon juice to the steamer basket.
  5. Cover the pot with a lid, and steam the green beans for 4-6 minutes, or until they are tender but still crisp.
  6. Remove the pot from the heat, and let the green beans stand for 1 minute.
  7. Serve the green beans hot, with the Garlic Dill Hollandaise Sauce on the side.

Garlic Dill Hollandaise Sauce

Ingredients:

  • 1/2 cup (1 stick) unsalted butter, melted
  • 2 large egg yolks
  • 1 tablespoon freshly squeezed lemon juice
  • 1/2 cup grated fresh dill
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 1 cup heavy cream

Instructions:

  1. In a heatproof bowl, whisk together the egg yolks and lemon juice until well combined.
  2. Set the bowl in a pot of simmering water, making sure that the bottom of the bowl is not touching the water.
  3. Whisk the egg yolk mixture constantly for 5-7 minutes, or until it thickens and doubles in volume.
  4. Remove the bowl from the heat, and whisk in the melted butter, dill, garlic, salt, and cayenne pepper.
  5. Add the heavy cream to the bowl, and whisk until well combined.
  6. Taste the sauce, and adjust the seasoning as needed.
  7. Serve the Garlic Dill Hollandaise Sauce warm, over the Steamed Fresh Green Beans.
